In the green hills of Rancho Grande, Matagalpa, something beautiful happened at the local health center.

AMOS staff transformed the space into a live kitchen for a special workshop, one focused on a national strategy to prevent child malnutrition and care for children aged 0-5 years.

Community health volunteers from the rural villages around Rancho Grande gathered to learn how to make simple, affordable, and highly nutritious meals.

Together, they prepared yucca patties and egg cakes with spinach and yucca leaves, ingredients easily found and available in these communities.

One by one, local leaders stood with empty plates, ready to taste the recipes they had helped prepare. Laughter filled the air. It wasn’t just a cooking class, it was a celebration of shared wisdom, health, and the joy of nourishing one another.

Among them was Reina, a beloved midwife with over 20 years of experience. She brought her 3-year-old grandson, whose favorite food is “bean soup with cheese” — just like his grandma.
